Spark’s Chicken Taco Soup: A Delicious and Easy Recipe

Ingredients

1 lb boneless, skinless chicken breasts or thighs

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn kernels, drained

1 can (15 oz) diced tomatoes

1 can (8 oz) tomato sauce

4 cups chicken broth

1 packet taco seasoning (or homemade blend: chili powder, cumin, garlic powder, salt, pepper)

Optional toppings: shredded cheese, sour cream, avocado slices, tortilla strips, cilantro, jalapeños


Instructions

Stovetop Method:

Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant.

Add chicken, black beans, corn, diced tomatoes, tomato sauce, chicken broth, and taco seasoning. Stir well.

Bring to a boil, then reduce heat and simmer for 20–25 minutes, or until chicken is cooked through and tender. Shred the chicken with two forks.

Serve hot with your favorite toppings.

Slow Cooker Method:

Place all ingredients except toppings into a slow cooker. Cook on low for 6–8 hours or high for 3–4 hours. Shred the chicken before serving.

Instant Pot Method:

Combine all ingredients in the Instant Pot. Seal the lid and cook on high pressure for 15 minutes. Allow for a natural pressure release. Shred the chicken and serve.

 

Notes

Adjust spice levels by adding jalapeños or extra chili powder for heat.

For a vegetarian version, substitute chicken with lentils or extra beans and use vegetable broth.

Store leftovers in an airtight container for up to 4 days in the fridge or freeze portions for up to 3 months.
