Ingredients

Prepare Ingredients : Ensure the rice is cooked, cooled, and fluffed to avoid clumping. Beat the eggs and set aside. Chop all vegetables and measure spices.

Heat the Wok : Heat a large wok or skillet over medium heat. Add oil and sauté the onions until translucent.

Add Aromatics : Stir in the ginger-garlic paste, curry leaves, and green chilies. Cook for 1–2 minutes until fragrant.

Season and Cook : Add turmeric, black pepper, and garam masala. Stir well to combine.

Scramble Eggs : Increase the heat to high and pour in the beaten eggs. Scramble quickly until just set.

Add Rice : Add the cooled rice to the wok. Stir-fry for 2–3 minutes, ensuring the rice is evenly coated with spices.
