Ingredients

Scale

For the Chicken Patties:

  • 1 lb ground chicken
  • ½ onion, finely diced
  • 2 garlic cloves, minced
  • 1 large egg
  • ⅓ cup panko breadcrumbs
  • 1 ½ tsp Worcestershire sauce
  • 2 tsp mayonnaise
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 ½ tsp Italian seasoning
  • 1 Tbsp ketchup
  • 1 ½ tsp milk
  • 2 tsp Dijon mustard

For the Mushroom Gravy:

  • 8 oz brown mushrooms, sliced
  • ½ onion, finely chopped
  • 2 garlic cloves, minced
  • 1 Tbsp unsalted butter
  • 2 Tbsp all-purpose flour
  • 1 ½ cups beef broth (or chicken stock)
  • ½ cup water
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

Make the Chicken Patties

  1. In a large bowl, combine ground chicken, onion, garlic, egg, breadcrumbs, Worcestershire sauce, mayo, salt, pepper, Italian seasoning, ketchup, milk, and Dijon mustard.
  2. Mix gently until just combined, then form into 4-5 oval patties about ¾ inch thick.
  3. Heat 2 Tbsp olive oil in a skillet over medium heat.
  4. Cook patties for 3-4 minutes per side, until golden brown. Remove from skillet and set aside.

Step 2: Make the Gravy

  1. In the same skillet, melt butter and add onions and mushrooms.
  2. Sauté for 5 minutes, until softened. Stir in minced garlic and cook for 30 seconds.
  3. Sprinkle flour over the mixture and stir for 1 minute to cook off the raw taste.
  4. Slowly pour in beef broth and water, stirring constantly to avoid lumps.
  5. Season with salt and pepper, then bring to a simmer for 3-4 minutes.

Step 3: Simmer the Patties in the Gravy

  1. Return the cooked patties to the skillet, spooning gravy over the top.
  2. Cover and simmer for 10 minutes, letting the flavors blend.

Step 4: Serve and Enjoy!

  • Serve hot with mashed potatoes, rice, or roasted vegetables.

Notes

  • For extra flavor, add fresh thyme or parsley to the patties.
  • Make it gluten-free by using almond flour or gluten-free breadcrumbs.
  • For a dairy-free version, swap milk and butter for plant-based alternatives.
  • Leftovers? Store in an airtight container for up to 3 days or freeze for 2 months.
