For the Chicken & Broth:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 6 cups chicken broth
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • Juice of 1 lime

Optional Garnishes:

  • Fresh cilantro, chopped
  • Avocado slices
  • Shredded cheese
  • Crushed tortilla chips
  • Sour cream or Greek yogurt

Instructions

: Sauté the Aromatics

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and jalapeño, cooking for 2-3 minutes until fragrant.
  3. Stir in tomato paste, cumin, smoked paprika, chili powder, and coriander, cooking for 1 more minute to enhance flavors.

Step 2: Simmer the Soup

  1. Pour in chicken broth and add fire-roasted tomatoes, corn, black beans, salt, and pepper.
  2. Add whole chicken breasts or thighs, then bring to a gentle boil.
  3. Reduce heat and simmer for 20 minutes, until chicken is fully cooked.

Step 3: Shred the Chicken

  1. Remove the cooked chicken, shred it with two forks, and return it to the pot.
  2. Stir in fresh lime juice, adjusting seasoning as needed.
