For the Chicken & Broth:
- 1 lb boneless, skinless chicken breasts or thighs
- 6 cups chicken broth
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (15 oz) black beans, drained and rinsed
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- Juice of 1 lime
Optional Garnishes:
- Fresh cilantro, chopped
- Avocado slices

- Crushed tortilla chips
- Sour cream or Greek yogurt
Instructions
: Sauté the Aromatics
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and jalapeño, cooking for 2-3 minutes until fragrant.
- Stir in tomato paste, cumin, smoked paprika, chili powder, and coriander, cooking for 1 more minute to enhance flavors.
Step 2: Simmer the Soup
- Pour in chicken broth and add fire-roasted tomatoes, corn, black beans, salt, and pepper.
- Add whole chicken breasts or thighs, then bring to a gentle boil.
- Reduce heat and simmer for 20 minutes, until chicken is fully cooked.
Step 3: Shred the Chicken
- Remove the cooked chicken, shred it with two forks, and return it to the pot.
- Stir in fresh lime juice, adjusting seasoning as needed.
Step 4: Serve & Garnish
