Step 1: Prepare and Cook the Chicken
- In a bowl, season the chicken pieces with salt, pepper, paprika, cumin, and coriander.
- Heat coconut oil in a large skillet over medium heat.
- Add the chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
- Remove the chicken from the pan and set aside.
Step 2: Make the Peanut Sauce

- Whisk until the sauce is smooth and starts to bubble (about 3 minutes).
Step 3: Combine & Simmer
- Return the cooked chicken to the skillet, coating it in the peanut sauce.
- Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens.
Step 4: Garnish & Serve
- Remove from heat and sprinkle with chopped peanuts and cilantro.
- Serve hot over rice or vegetables and enjoy!
Notes
- For a low-carb option, serve with cauliflower rice or over zucchini noodles.
- Want extra heat? Add sriracha or chili flakes for a spicier version.
- Make it nut-free: Use sunflower seed butter instead of peanut butter.
- Storage Tips: Refrigerate leftovers in an airtight container for up to 3 days or freeze for 2 months. Reheat with a splash of water or broth to maintain the sauce’s consistency.
