68 large jalapeños, halved and seeded

1 cup cooked shredded chicken

1 cup shredded cheddar or Monterey Jack cheese

1/4 cup cream cheese (softened)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 cup breadcrumbs

1 egg, beaten

Cooking spray or oil for baking

Optional toppings: chopped green onions, sour cream, or ranch dressing


Instructions

Preheat the Oven:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Filling:

In a mixing bowl, combine shredded chicken, cheddar cheese, cream cheese, garlic powder, and onion powder. Mix until well combined.

Stuff the Jalapeños:

Spoon the chicken-cheese mixture into each jalapeño half, filling them generously.

Coat the Poppers:

Dip each stuffed jalapeño into the beaten egg, then roll it in breadcrumbs until fully coated. Place them on the prepared baking sheet.

Bake:

Lightly spray the tops of the poppers with cooking spray or brush with oil for extra crispiness. Bake for 15–20 minutes, or until golden brown and the cheese is bubbly.

Serve:

Let cool slightly before serving. Garnish with chopped green onions and serve with sour cream or ranch dressing for dipping.

 

Notes

For a spicier kick, leave some jalapeño seeds inside.

Substitute chicken with cooked bacon or sausage for a different flavor profile.

To make ahead, prepare the poppers, freeze them unbaked, and bake directly from frozen (add 5–10 minutes to baking time).
